Scotcheroos
A family favorite with crispy rice cereal, peanut butter, and chocolate and butterscotch chips!

- 1 cup white sugar
- 1 cup light corn syrup
- 1 cup peanut butter, smooth or crunchy
- 6 cups Rice Krispies or similar cereal
- 1 cup semi-sweet chocolate chips
- 3/4 cup butterscotch chips
- cooking spray or olive oil to coat pan
Place corn syrup and sugar in large saucepan. Cook over medium heat, stirring frequently. Sugar should begin to melt. Remove from heat when mixture comes to a boil. Do not let it boil for long, or the bars will be very hard.
Add peanut butter and mix well. Add cereal and stir until well coated.
Press mixture firmly into greased 13 x 9 pan.
Melt chocolate and butterscotch chips. You can melt them on the stove slowly over low heat until melted, or, I usually melt them in the microwave in a bowl. Every 30 seconds, stop and stir the chips until melted. It usually takes around a minute. Spread evenly over the top of the cereal mixture in the pan. Let cool and cut into bars. My family usually cuts 2 x 2 squares, but you can cut them however you like!!
