Thai Chicken Lettuce Wraps

This is perhaps one of the most delicious recipes I have ever made! However, it is a rather lengthy process. My husband and I especially love the rice noodles and the peanut dipping sauce. Many times I do not make the sesame ginger dipping sauce just because we prefer the peanut sauce. The rice noodles add a wonderful crunchy layer. When cooking them, use caution. They do puff up quickly. I usually fry them in small batches. Every time we have these, though, we exclaim how it is one of the best recipes we have ever made. There is often leftover stir fry and peanut sauce, which could be used for another recipe or leftovers. Do not be intimidated by the length of the recipe. Most of the items are simple to add together, mix, and adjust according to your tastes. I highly recommend this recipe!

Thai Chicken Lettuce Wraps

An absolutely delicious recipe for dinner!

Ingredients
  

  • 4 chicken breasts cut into bite size pieces
  • 1 tbsp oil
  • 3 green onions sliced
  • 1 8 oz can water chestnuts
  • 1 bunch bibb lettuce separate leaves
  • 2 cups rice noodles
  • 1 cup oil to fry rice noodles

Stir Fry Sauce

  • 1/4 cup water
  • 1 tsp cornstarch
  • 1/3 cup soy sauce
  • 1/4 cup sugar
  • 1/4 cup vinegar
  • 1 Tbsp oil
  • 2 tsp sesame seeds
  • 1 tsp red pepper flakes
  • 1 tsp chili powder
  • 1 tsp ground ginger

Sesame Ginger Dipping Sauce

  • 1/4 cup water
  • 3/4 tsp cornstarch
  • 1/3 cup sugar
  • 1/3 cup vinegar
  • 1/4 cup soy sauce
  • 1/2 tsp sesame seeds
  • 1 tsp ground ginger
  • 1 tsp oil
  • 1/4 tsp minced garlic
  • 1 dash red pepper flakes

Peanut Dipping Sauce

  • 1/2 cup peanut butter
  • 1/3 cup water
  • 2 Tbsp vinegar
  • 1/2 tsp ground ginger
  • 1/8 tsp red pepper flakes
  • 1/4 cup sugar
  • 1/4 tsp minced ginger
  • 1/2 tsp chili powder
  • 1/2 tsp oil
  • 1 Tbsp brown sugar

Instructions
 

Stir Fry Sauce

  • Combine water and cornstarch and stir until cornstarch dissolves. Add to a small saucepan with all other stir fry sauce ingredients. Cook over medium heat and bring to a boil. Reduce heat and simmer until it thickens. Remove from heat.

Sesame Ginger Dipping Sauce

  • Combine water and cornstarch and stir until cornstarch dissolves. Combine this with all other sesame ginger sauce ingredients in a small pan over medium heat. Bring to a boil, reduce heat, and simmer for 2 minutes. Remove from heat. Pour into a bowl for spooning onto lettuce wraps.

Peanut Dipping Sauce

  • Combine all ingredients in a small pan over medium heat for 2 minutes, stirring frequently. Whisk together until smooth. Remove from heat. Pour into a bowl for dipping or spooning onto wraps.

Rice Noodles

  • Heat 1 cup oil in saucepan over medium high heat. Add noodles and cook. It only takes a few seconds for the noodles to puff up! Remove noodles once they have puffed up and drain on paper towels.

Chicken

  • Heat 1 tsp oil in large skillet over medium heat. Add sliced chicken to pan and cook until done, about 5 minutes. Stir regularly. Add water chestnuts. Heat for 1 minute. Add 5 tablespoons of the stir fry sauce into the pan and heat for 2 minutes, stirring frequently. More stir fry sauce can be added if preferred. Add green onions.
  • Spoon chicken into lettuce cups. Add puffed rice noodles. Serve with dipping sauces.
