Scotcheroos

Scotcheroos are such a family favorite! Two of my adult sons recently asked to have them when they came to visit, and I could not refuse. They are so yummy! I even get asked to bring them to gatherings, which is even better because I will not eat so many of them!

Ingredients
- 1 cup white sugar
- 1 cup light corn syrup
- 1 cup peanut butter, smooth or crunchy
- 6 cups Rice Krispies or similar cereal
- 1 cup semi-sweet chocolate chips
- 3/4 cup butterscotch chips
- cooking spray or olive oil to coat pan
Instructions
- Place corn syrup and sugar in large saucepan. Cook over medium heat, stirring frequently. Sugar should begin to melt. Remove from heat when mixture comes to a boil. Do not let it boil for long, or the bars will be very hard.
- Add peanut butter and mix well. Add cereal and stir until well coated.
- Press mixture firmly into greased 13 x 9 pan.
- Melt chocolate and butterscotch chips. You can melt them on the stove slowly over low heat until melted, or, I usually melt them in the microwave in a bowl. Every 30 seconds, stop and stir the chips until melted. It usually takes around a minute. Spread evenly over the top of the cereal mixture in the pan. Let cool and cut into bars. My family usually cuts 2 x 2 squares, but you can cut them however you like!!
