Roasted Pineapple

My husband and I have been on a pineapple binge ever since we went on a cruise last April. I came upon a similar recipe and thought it sounded delicious. It was so easy to prepare and gave me a chance to use my relatively new Ninja Flip Air Fryer. I served the slices with ice cream, and, oh, my, it was decadent! We then finished off the rest of the slices as well! So easy to try!

Roasted Pineapple

This simple yet absolutely delicious recipe can be made in an air fryer.

Ingredients
  

  • 1 fresh pineapple may use canned as well
  • 1 Tbsp butter melted
  • 2 Tbsp brown sugar
  • 1 tsp cinnamon

Instructions
 

  • Cut skin off pineapple.
  • Cut into quarters. I did this instead of rings – it was easier.
  • Remove core from each section.
  • Slice into sticks or chunks – whatever you prefer.
  • Mix dry ingredients together with melted butter. Crumble/spread onto pineapple slices. Place on lightly grease air fryer basket. I also placed foil onto the tray below. You could use parchment paper as well.
  • Air fry for 12-15 minutes at 380° F. Flip halfway through the time. Remove when pineapple looks caramelized.
  • Eat warm, plain or with whipped cream or ice cream. Store in refrigerator in sealed container – though we ate it all!
