Egg Roll in a Bowl

This recipe caught my attention a while ago when I had extra cabbage in the fridge from another meal. Since I have been trying to eat healthier recently, it seemed rather easy and way better for me than a fried egg roll. Feel free to add Siracha or other spices if you like it hot!!

Egg Roll in a Bowl

A healthier option with lots of flavor! This recipe is adapted from Spend with Pennies.

Ingredients
  

  • 1 pound ground chicken, pork, or turkey I used chicken
  • 4 cups cabbage, chopped can used coleslaw mix
  • 2-4 green onions chopped
  • 4 cloves minced garlic
  • 3 Tbsp soy sauce
  • 1 tsp sesame oil or other favorite oil
  • 2 tsp ginger fresh or ground
  • sesame seeds for garnish

Instructions
 

  • Brown the ground meat in a large skillet over medium heat. Break up into smaller bits. Drain any fat.
  • Add whites of the chopped green onion, ginger, garlic, and cabbage. Cook, until cabbage becomes tender, about 5 minutes. Stir often.
  • Add soy sauce and sesame oil and cook a minute or two to coat.
  • Garnish with green onions and sesame seeds. Serve immediately.
