Chicken Salad
This chicken salad recipe was given to me by my mother-in-law. It is by far the best chicken salad I have ever tried. It is delicious in a sandwich, croissant, on crackers, or just by itself. The hardest part is slicing the grapes! We have served this a many family gatherings, including wedding showers, and it is always a hit!
Chicken Salad
Ingredients
- 1 12.5 oz can of chicken Or 3 cooked chicken breasts, shredded
- 1 cup diced celery
- 1 cup grapes, sliced in half can use green, purple, or red grapes
- 1 8 oz can of crushed pineapple drained, but save juice
- 1/2 cup chopped pecans or walnuts if desired
- 1/2 cup mayo may add more to achieve the desired texture
Instructions
- Add shredded chicken, sliced grapes, diced celery, pineapple, and nuts to a large bowl and mix.
- Add mayo and saved pineapple juice to achieve desired moistness. Mix well and chill. Serve with bread, croissants, or crackers.
