Cherry Chocolate Chip Bars

A friend gave us a bucket of fresh picked cherries, and after eating our fill, we needed to figure out a way to use the rest of them. This recipe combines the tartness of the cherries with my favorite, chocolate! It will certainly be added to your favorite summer recipes, and can be used with almost any fresh fruit. Cherry Chocolate Chip Bars

A delicious and easy dessert for fresh cherries!

Ingredients
  

  • 1 stick (1/2 cup) butter may use salted or unsalted
  • 1 cup light brown sugar, packed
  • 1 tsp vanilla
  • 1 large egg
  • 1 cup flour
  • 1/4 tsp salt, optional
  • 3/4 cup semi-sweet chocolate chips
  • 1 cup cherries, halved pitted, fresh or frozen

Instructions
 

  • Preheat oven to 350° F. Spray 8 x 8 pan with cooking spray or line with foil and spray foil. Set aside. Pit cherries. I used a solid straw and it worked wonderfully!
  • Melt butter and add brown sugar to combine. Add egg and vanilla. Mix well. Combine with flour and salt, stirring until just combined. Fold in chocolate chips and cherries. Pour batter into prepared pan.
  • Bake for 25-30 minutes, or until the edges begin to pull away from the sides of the pan. A toothpick may not come out clean because of the cherries and chips. Center should be set.
  • Allow to cool. Can be stored in an airtight container in the refrigerator for up to one week. Warm in microwave to make them extra yummy!
