Blackberry Cobbler
A wonderful summer treat with lots of crumble topping!
Ingredients
- 4 cups blackberries fresh or frozen
- 3 tbsp sugar
- 1½ cups flour
- 1½ cups rolled oats I use quick oats
- 1 cup brown sugar
- 1 tsp cinnamon
- ½ tsp nutmeg
- 1¼ cups butter softened
Instructions
- Preheat oven to 350° F. Butter a 9 x 9 pan. In mixing bowl, add sugar to berries and stir gently. In another bowl, combine the dry ingredients.
- Add butter. Using a pastry cutter, cut in the butter until it is rather loose and crumbly.
- Add sugared blackberries to buttered pan, spreading evenly. Top the berries with the dry crumble mix.
- Bake in preheated oven at 350° for approximately 40 minutes or until bubbly and topping is golden brown.
- Serve with ice cream while still warm!
- I found I had extra crumble leftover, so I spread it out on a piece of parchment on a baking sheet.
- I baked in the same oven for about 10-15 minutes, until golden brown. Delicious sprinkled on smoothies, yogurt, or eaten like granola!
