Bacon Wrapped Stuffed Dates

These appetizers give the appearance of something exotic and fancy, but are so very easy to make. We made these on a whim, and will serve these more in the future. After all, how could they miss? The goat cheese stuffed dates are wrapped in bacon!

Bacon Wrapped Stuffed Dates

A delicious appetizer. Impressive yet simple. Adapted from Pinch of Yum.

Ingredients
  

  • 8-10 slices Bacon, uncooked, cut in half. May need adjusted, depending on how many dates you have.
  • 20 whole Medjool dates
  • 8 oz Goat cheese May use flavored, if desired.
  • Toothpicks

Instructions
 

  • Preheat oven to 350° F. Slice dates on one side only, lengthwise, creating an opening. Remove pit if needed.
  • Stuff a small amount of goat cheese into each date. Press sides together slightly.
  • Wrap half slices of bacon around dates and secure with a toothpick.
  • Arrange on a cookie sheet with low sides. Bake for 10 minutes. Remove and turn each one over. Bake another 8-10 minutes. Turn again and bake another 5-10 minutes, until the bacon is cooked through.
  • Remove from oven and place on paper towel lined plate. Let stand for 5-10 minutes before serving.
