Easy Pesto
Easy Pesto
This pesto is an easy and delicious recipe. I have frozen this in small amounts to just pop in with some pasta or add to a favorite chicken or fish recipe. I love the ability to add more or less of any of the ingredients to suit your taste. I now grow my own basil so I can have a supply of fresh basil on hand throughout the year!
Equipment
- 1 Food processor
Ingredients
- 3 cups fresh basil leaves loosely packed
- 1/2 cup grated Parmesan
- 1/3 cup toasted pine nuts I have used them without toasting, and it is still good
- 3 cloves garlic
- 1 tsp salt
- 1/2 tsp freshly cracked pepper
- 1/2 cup olicve oil extra virgin
Instructions
- Pulse the basil, Parmesan, pine nuts, garlic, salt and pepper in the food processor until finely chopped.
- Slowly drizzle olive oil into the food processor while it is running until the ingredients are combined. Stop and scrape the sides. Pulse again until smooth. Add salt and/or oil to desired taste.
- Serve immediately, refrigerate in a sealed container for up to 4 days, or frezze for up to 3 months.
